If you're looking for something easy, Charles Callahan did a collection of preludes based on Marian themes (Morningstar).

Flor Peeters has a nice chorale prelude on the Ave Maria plainchant. Easy, short, and very nice!

Henri Carol has a setting of Salve Regina, although I'm uncertain what melody he is referencing! Page 122.

In addition to the Marian antiphons, there are a number of versets based on the Ave Maris Stella. There's a good range from compact versets (e.g. Frescobaldi, Fasolo) to fairly extended compositions (e.g. Titelouze).
