Organ and String Music for Christmas

I'm sure this has been discussed before, but I am looking for arrangements of carols for Midnight Mass with string parts. Or at least directions to point me in for resources. I'm having a hard time finding anything worth looking at. I'm just trying to find something better than the strings playing an SATB arrangement behind the choir.

At the risk of being tarred and feathered for the choice of arrangers...I have used this setting of "What Child is This" with two violinists, and it works very well.

It’s too slow and boring to play as written. It really only works when it’s played as a slip jig at 1.75x it’s regular tempo.

I've heard it at fairly lilting tempos, so it depends on the conductor, I guess... but yes, "medium jig" is how I think of it too.
