At my parish we've been having fun singing and playing Duke Street in 2-part canon. After finishing the hymn in SATB--there are 3 choices of text in Worship III--the choir does a men-women canon of verse 1 (sometimes a capella), followed by an SATB verse.
For the canon verse, the 2nd voice comes in on measure 2. Because of the simple but extensive wave shape of the melody line, the echo peaks when the other voice is falling. It flows beautifully.
Last night we sang in unison but the instruments played in canon: flute first with the voices, then violin. Just fwiw. It's quite pretty.
