Last year the little Episcopal parish that I serve commissioned Matthew Dean, a Chicago-based musician to set an English version of the Christmas Day introit and verse inspired in part by 12th/13th century Notre Dame polyphony. I thought it was very effective. It was written for a quartet and I am not knowledgeable enough to know how well it would adapt to a larger ensemble. I've attached the score and a fair recording from a rehearsal. Christmas is a long way off, but I wanted to post it while I had it in mind.
