Could this be influenced by the reality that remote areas are less likely to have the organs and music that would attract organists? We have two major universities here in Houston, Rice, and the UofH. The UofH, which boasts Robert Bates, and Rice, with Ken Cowan, have well-enrolled organ studios.
You recall the Sinatra line "....if I make it there, I'll make it anywhere...."
I think that a lot of real talent is attracted to big cities b/c there is usually more stimulus: other talent on the same instrument, other talent with other instruments--IOW, more "artistic hive." There may be more money available, too.
And--depending on the age of the people--there is far more social life available.
