CDs for a course on sacred music

What would be on your list for "must have CDs" for a survey course on sacred music (pre-college level)? I want to start with Psalms (preferably with musical settings similar to ancient times) and then the best of sacred music, through time.

Paraclete Press has a bunch of CDs for sale. "Sundays in Ordinary Time" looks like it has the Gradual, according to the tracklisting.

San Antonio Vocal Ensemble has some excellent recordings. Particularly this one would be good for your class.
