I have just been appointed as the new Music Ministry Head in our University and I hope to introduce polyphony with a mix of homophony to our university. Sadly, I lack the online resources and am having difficulty finding easy SAB pieces. I'm only familiar with Jesu Rex (Palestrina) and Dalitz's Mass for Three Voices. Other than that, I'm not aware of others.

Kevin Allen’s collections available at CCwatershed. The Motecta Trium Vocum is a good starter; he has two other collections called the Stowe Missal Motets and Matri Divinae Gratiae. You’re looking at about 15 or so useful motets for all year round use!
There's a collection of accompanied SAB pieces called "Oremus" by Fr Carlo Rossini. It's (mostly?) arrangements of other pieces found in his other books. Message me if you want me to send you a PDF.

Jesu Salvator mundi - Menegali (very easy and beautiful, we repeat it 3x) Christus factus est - Yon Te Joseph celebrent & Pascha nostrum - Ravanello (a lot of Ravanello seems to be 3v) Ave Maria - Franck O esca viatorum - JM Haydn Adoro te o panis caelice - JM Haydn - is actually SATB + organ, but incredibly simple, and you don't have to have the organ, though it's nice Panis angelicus - Casciolini O gloriosa virginum - attr. Palestrina, have seen both 3v and 4v versions Magnificat a 3 - Dalitz Praeclara custos - Besnier Non nobis Domine - canon - sometimes attr. Byrd Stabat Mater - Tartini (a bit more challenging than the the other pieces listed)
As you have mentioned one of my mass settings, you might be interested that you can find many more in the index by number of voices on my website. Apart from two other masses for three voices (one in the style of Mozart (in E major) and one in Renaissance counterpoint (over the solemn Salve Regina tone)) there are also motets like "Ascendit Deus", "Tollite portas" and some Latin hymns (Salve festa dies, O filii et filiae, Veni redemptor, Vexilla regis, Christe qui lux es et dies) and also a three part motet for Pentecoste (Venu Sankta Spirito).
And if you have not yet noticed it, you can do a multi-category search on CPDL, which, however, will yield tons of results in which you must dig out what might be useful.
