Any suggestions for a book/course of study for advanced classically trained singers who would like a comprehensive education in chant? Overwhelmed a little by all the resources available.

You are are right that there are tons of resources available, and that it can be overwhelming! It sounds like you might be a good candidate for the ICA. I teach live courses online, and have worked with a number of classically trained, professional singers (I am one myself).
In my Level I course, I spend a good chunk of time explaining some of the liturgical background (e.g. the impact of Vatican II on the liturgical calendar, and the difference between chant books before and after Vatican II), as well as different approaches to chant (e.g. Solesmes Method and semiology), so that it's easier to navigate all the resources. We also build a strong basis for sight singing and hearing the modes, and of course cover all the notation.
