This is probably a stupid post, or a possibly little bit different or simpler than most of the posts I've seen here.
But! The in these videos, I've noticed some music throughout that sounded like gregorian chant. I really like the sound and i would really like to know what exactly it is.

But, sorry, I don't think that this is Gregorian chant. Chant is always written on a sacred text in Latin, and is almost always music without a steady beat. This song has a steady beat, and I think it's being sung in Italian; also, the words don't sound like they have any religious significance.
Chant knockoff. Probably composed specifically for this flick (or more likely, lifted from some generic music library for a nominal license fee). In Mixolydian mode (don't get me started on the overused Mixolydian mode in contemporary culture), parallel thirds between Do - Sol in stepwise motion. The real giveaway is that it is loaded with syncopated (20th century) tied eighths. Typical contemporary attempt at mimicking an old style without accomplishing the feat. It is the way of 'sound designer' (they used to be called a film score composer and composed real music) The music on old WB Roadrunner cartoons is much more sophistocated than this.
