I just got a requerst for "settings for the opening of Laetare Sunday." I of course linked the Simple English propers. I think the skill level of the choir would best be described as "well-intentioned." Anyone have anything else to suggest? Also perhaps something for Offertory and Communion, just so they have options.
I know nothing else, so your informed suggestion would be better than anything I can add.

In Latin, the Graduale Simplex might be a good choice for a "well-intentioned" choir. You could also use By Flowing Waters for something in English.
If the choir has no experience with chant in Latin or English, perhaps Christoph Tietze's Introit Hymns for the Church Year would be helpful. It's a paraphrase of the Gradual but better than picking a hymn at random.
