How high do your Tenor 1 folk sing? If I'm not mistaken, the original would have been (in F major) for ATBarB voices, with the Alto part ascending to a high D (and the Bass descending to a low F).
There is a TTBB arrangement (in B-flat major) commericially available from Alfred Music (formerly published by Belwin-Mills), but it cuts corners too severely in some places, and I cannot recommend it too highly.
ryand, I would say no higher than A for the tenor 1's and no lower than F for Bass. No tenorini in the present choir.

What about some simpler 3 or 4 part Easter motets? I've got the Kevin Allen collection, or at least one of them, and have selected a couple from there.
Exultate justi was the Introit (1st psalm verse) for an upcoming Mass that I was looking at, which is why I was looking for that specific text and the Viadana is the only one I knew. There is an SSAA version by Hollander listed on CPDL, but the link is dead.
Inveni David by Anton Bruckner is a lovely male-choir piece. The only arising issue might be that it's accompanied by a quartet of trombones, but I'm sure there are organ versions, too. (http://www.free-scores.com/download-sheet-music.php?pdf=7724)
