"Great" Amen for Chant Masses?
One could also add a polyphonic extension onto the amen sung by the people. There is an amen by Praetorius on cpdl that works well as an extension to the chanted amen.

It’s still the Christmas season so the Sweelinck Hodie might do the bill. If not, perhaps his Te Deum. If you are in the U.S., as a nod to inculturation, you might also consider the Billings, O Praise the Lord of Heaven.
